I think Cole was around 18 months when we gave him a pillow. I'm sure at 1 year old a pillow would be fine.
I gave my daughter Jersey a pillow when she was two because she got her "big girl bed". It's a flat pillow but I trust her enough to know that she will move it if she has to. Most of my friends, that have children, gave their children pillows much sooner, but Jersey really didn't care either way. She still doesn't really sleep on it.

I just put a pillow in my 17 month olds bed last night. He seemed to like it..

We have tried giving Austin a pillow, he just doesn't use it, he is 2 :)
At 1yr, a pillow should be fine. I wouldn't give him/her a huge fluffy one or anything, and definatly not if they're still in a crib.
We did at 13 or 14 months. But now he throws that and any blankets or stuffed animals out of the crib before he can go to sleep.
