I make these for my son, but his father usually devours them too. They are full of protein, complex carbs, iron (from the molasses), and more. I've been told you can replace butter and such with apple sauce, I have never tried this but if it works for you let me know.
- Preheat your oven to 350 F, and lightly grease your cookie sheet
- Soften 1/2 cup of margarine, butter, or shortening and combine with 1 cup of peanut butter, 1/4 cup of brown sugar, 1/4 cup of molasses, 2 small eggs (adjust this amount to the size egg you have), and 1/2 teaspoon of vanilla.
- In a separate bowl (sorry to those who don't have a dishwasher :P ) mix 3/4 cup of whole wheat flour, 1 cup of white flour, 3/4 teaspoon of baking soda, and 1/4 teaspoon of salt.
- Combine both mixtures. Might have to mix with your hands.
- Roll golf ball size cookies in your hands and flatten them down. I can usually fit 12 cookies on a standard cookie sheet.
- Cook for about 7-8 mins, or until you can stick a fork in them and it comes out clean.
- Cool for about 2 mins on a cooling rack (they are very crumbly when hot), then transfer them into a plastic container to keep them soft.
